Kafta – Minced Meat Kebabs

Kafta, Kofte, Keftedes.. It may go by different names but this is one of those dishes found all over the Med.

Serves 4

1/2 Kilo Minced Beef / Lamb

1 Large Onion

1 Hunk of stale Bread

1 egg yolk

Sumac

Flat Leaf Parsley

Dried Chili Flakes (Optional)

1/2 tbsp Salt & Pepper

1/4 Cup Milk

Soak the bread in a bowl with the milk. Meanwhile finely chop and saute the onion in a little sunflower oil. When translucent and golden, set aside to cool. Finely chop parsley.

When bread has soaked in all the milk, squeeze to discard excess liquid then crumble with fingers into a bowl.

Add remaining ingredients and mix together well using hands. Leave mixture in fridge for an hour or so, then form into sausage shapes, easier formed around a skewer.

Grill or barbecue until sizzling hot.

For Italian Polpette use Beef. Take out the Sumac and Chilli and replace with a handful of grated Parmesan cheese. These would then be fried and cooked in tomato sauce.
