Menemen is usually eaten for breakfast but will also make for a lazy dinner. Its tasty and simple, best shared straight from the pan with sesame village style bread.
For 4 – 6 people you will need:
10 tomatoes or 5 beef tomatoes – peeled and chopped
2 Green Peppers – finely sliced
1 knob Butter
3 Beaten Eggs
1/2 tsp Dried Mint
1/2 tsp Chili Flakes
Salt & Pepper
The easiest way to peel tomatoes is to score them with a sharp knife then blanch in boiling water for one minute. Take out and leave to cool. The skin should peel off without effort.
Meanwhile heat the butter in a frying pan and saute pepper until soft. I use those thin Turkish style peppers easily available in your local Mediterranean shop, but bell pepper if you prefer.
One peppers soften, add chopped tomatoes and cover pan. Simmer until tomatoes have softened into pulp. Add seasoning & herbs.
Stir in beaten eggs. Once egg starts to solidify, serve immediately in pan or serving dish, accompanied by lots of bread. Sometimes I add a handful of cheese to Menemen. My family-in-law often adds sucuk (beef sausage) or minced meat.
