Serves 3 – 4
500g Pork Mince
Graviera Cheese – cut into small cubes
1 1/2 tsp fennel seeds
2 tsp oregano leaves
1 large egg
1 tsp salt
black pepper
2 tsp sunflower oil
Lettuce leaves
Mix pork with whole egg, pepper and oregano in a bowl. Crush the fennel seeds and salt together then add to the pork mixture.
Form into balls then press down flat in the palm of your hand to make a pattie. Place a tsp full worth of cubed cheese in the centre, then cusp hand slightly while working to join outsides of patties with fingers from free hand.
When cheese becomes enclosed, you have a filled burger.
Fry over a moderate flame in sunflower oil until golden on both sides and meat is cooked through – about 6 to 8 minutes on each side.
Eat burgers wrapped in lettuce leaves as a light alternative to bread buns.
