Makes 16 bite sized pieces
80g Yiamas Smoked Feta
Handful of pine nuts
5 shredded mint leaves, 2 tsp dried mint
1/4 cup fine bulgur wheat
1/3 cup boiling water
Salt & pepper
Pre -heat oven to 220 degrees.
Cut courgettes into half, then cut the halves into half again, lengthways.
With a sharp small knife, cut out the flesh of courgettes and finely chop. Sautee in a drop of oil until coloured and soft.
Pour 1/3 cup boiling water over 1/4 cup of bulgur wheat in a bowl and cover for 10 minutes. Fine bulgur wheat will soak up all the liquid and almost cook through.
Crumble feta into another bowl and mix with mint, pine nuts, fried courgette piece and soaked bulgur wheat. Mix and season to taste – this is your filling.
Lay courgette halves into a baking tray and drizzle with olive oil. Fill with a teaspoonful of bulgur mix.
Cover tray with foil and place on top shelf of oven. After 20 minutes discard foil and continue to cook for another 15 minutes, until courgettes are soft and filling golden.
