Serves 6 – 8
200g 00 Flour (very finely milled)
200g Plain Yogurt
50g Olive Oil (NOT Extra Virgin!)
3 Eggs
160g Sugar
1 Bertolini Vanilla Lievito (Baking Soda) Sachet
Berries – Black berries / Mulberries / Blue Berries / Raspberries
Mix flour, sugar, baking soda sachet, eggs, yogurt and oil in a bowl.
Grease baking tin with oil, lay berries in the bottom, sprinkling with extra sugar if the berries are sour.
Pour cake batter over berries and let stand for 5 minutes. Bubbles will appear on the surface, this is the lievito working its magic.
Bake in a preheated oven (180 degrees) for 50 minutes.
Once surface is golden brown remove and test if cooked through by poking a skewer inside; if it comes out clean the cake is ready!
Leave to cool, then turn out upside down and dust with icing sugar.
Serve with or without an extra dollop of yoghurt.
