1 Cabbage (1.5kg) – Washed and Shredded
100g Smoked Bacon
100g Smoked Ribs
400g Cabanossi Sausages (Romanian Style Sausages)
1 Large White Onion – Chopped
2 Beef Tomatoes – Peeled and Diced
300ml White Wine
2 Tbsp Oil
1 Bunch Dill – Chopped and left in a bowl with 2 tbsp salt for 10 minutes.
2 Bay Leaves
Salt & Pepper
In a large pan, heat oil and saute meats until browned and almost cooked through then remove and set aside.
Saute onions until translucent in the same pan, then add cabbage, tomatoes, white wine, thyme, and the dill with salt.
Cover pan and pop into a preheated oven (moderate temp.) for 45 minutes. Re-add ribs and bacon and continue to cook for a further 15 minutes, until cabbage is soft and the meat has warmed through.
Serve with Cabanossi sausage and pickled pepper.
