White Bean Soup – Romany Style

For 4 Persons You Will Need;

1kg Dried White Beans – soaked overnight

2 Onions – Diced

1 Red Pepper – Diced

2 Beef Tomatoes

50ml Olive Oil

Salt & Pepper

Rinse beans with warm water. Fill a pot with 3 litres of fresh water, cover and simmer for an hour.

In another pot saute the onions and pepper in olive oil until soft and translucent. Add tomatoes and continue to heat until tomatoes breakdown and a sauce is formed.

Add beans and their water to the sauce and season to taste. Serve soup with plenty of crusty bread.
