Serves 3 – 4
500g Pork Mince
Graviera Cheese – cut into small cubes
1 1/2 tsp fennel seeds
2 tsp oregano leaves
1 large egg
1 tsp salt
black pepper
2 tsp sunflower oil
Lettuce leaves
Mix pork with whole egg, pepper and oregano in a bowl. Crush the fennel seeds and salt together then add to the pork mixture.
Form mixture into balls then press down flat in the palm of your hand to make a pattie. Place a tsp full worth of cubed cheese in the centre, then cusp hand slightly while working with other hand to join outsides of patties to reform as a stuffed burger.
Fry over a moderate flame in sunflower oil until golden on both sides and meat is cooked through – about 6 to 8 minutes on each side.
Eat burgers wrapped in lettuce leaves as a light alternative to bread buns.
