Shankleesh – Lebanese Goat’s Cheese Salad


For 4 – 6 people you will need

200g Mature Goats Cheese or Sheep’s Feta

¼ Red Onion

3 Diced Tomatoes – (Seeds discarded)

½ Cucumber

2 handfuls flat leaf Parsley

2 tsp Thyme or Marjoram

¾ tsp Dried Chili flakes / Aleppo Pepper

Juice from 1 lemon

Salt & Pepper

Olive Oil

Dice tomatoes and finely chop onion and parsley. Combine with crumbled cheese and herbs and chili. Add lemon juice and a generous glug of olive oil. Taste for seasoning.

Leave to chill in fridge for a few hours before serving.
